1 Take bread dough out of freezer and allow to thaw. 2 Put the tomatillos in a pan over high heat and cover with water. Bring them to a boil and continue cooking for 8 minutes then drain. 3 Take out the pork, dice, and trim away fat. 4 Sprinkle the diced pork with the thyme and pepper. 5 Place a medium saucepan coated in the cooking spray over medium high heat. When hot add the onion and garlic, saute. 6 When onion and garlic are tender add the pork to the pan and continue sauteing until pork is browned. 7 Add the drained tomatillos, cilantro, salt, oregano, cumin, green chiles, and lemon juice. 8 Preheat oven to 350 degrees. 9 Mix ingredients together and bring to a boil. After boiling reduce heat to medium and allow mixture to continue cooking for 10 minutes, then remove from heat. 10 Take the bread dough and divide loaf in to 8 equal portions. 11 Roll out each portion to an 1/8 inch thickness. 12 Coat a baking tray in cooking spray. Place each of the dough portions onto the tray then press each portion into a 6 inch circle. 13 Mound 1/4 cup of the pork mixture onto one half of each of dough portions. 14 Use water to moisten edges of dough then fold dough over the mixture and press edges together. 15 Allow calzones to bake in preheated oven for 20 minutes.
