1 Using a food processor or blender, puree mango, orange and lime juices, salt, and garlic until smooth. 2 Pour mixture in a bowl and mix in onions, basil, and pepper. Wrap and refrigerate. 3 Preheat oven to 450 degrees F. 4 Cut off excess fat from pork and chop into cubes. 5 Combine pork and peppers and toss with oil and Old Bay. 6 Thread 1 piece of pepper and 1 piece of pork onto each of 32 skewers. 7 Lay skewers on a cooking spray coated baking sheet and bake 10 minutes or until pork is fully cooked. Serve kabobs with mango sauce.
Additional Information
The sauce and skewers can be prepped up to one day in advance, cook kabobs just before serving. These can also be grilled.
