0.75 lb Pork, tenderloin, lean, raw
1 tbsp olive oil
0.5 tsp ground cumin
2 cup fresh strawberries , hulled and cut into pieces
1 tsp sweetener (sugar substitute)
0.25 cup fresh chopped red onion , diced
1 pinch tabasco sauce
1 tbsp fresh lime juice
1 pinch salt and pepper
4 tbsp fresh cilantro (optional)


Directions
1 Pre-heat broiler.
2 Trim fat from pork and cut filet in half lengthways.
3 Brush both sides with olive oil and sprinkle with 1 teaspoon ground cumin, salt and pepper.
4 Place pork on broiler tray and broil for 5 minutes. Turn and cook for another 5 minutes. Test pork with a meat thermometer that should read 160 degrees F.
5 While the pork cooks, place strawberries in a medium-sized bowl and sprinkle with sweetener.
6 Add onion and hot pepper sauce.
7 Mix the remaining 1/3 teaspoon cumin and lime juice together and drizzle over berries.
8 Add salt to taste.
9 Toss well and sprinkle with cilantro.
10 Serve pork with salsa on top.
