1 Preheat oven to 475° F. 2 Coat baking dish with cooking spray. 3 Mix rosemary and garlic in a small bowl. 4 Using knife, cut several 1/2 inch deep pockets into top of tenderloin. Stuff 1/2 of rosemary and garlic mixture into pockets. 5 Massage remaining rosemary and garlic mixture onto surface of pork. Season with salt and pepper. 6 Place pork in baking dish. 7 Bake 20 minutes or until meat thermometer reads 160°F. 8 Let tenderloin rest 5 minutes before slicing.
