Ingredients
2 tbsp low sodium soy sauce
2 tbsp fresh lime juice
2 tbsp fresh chopped onion
1 tbsp natural creamy peanut butter , stir well before measuring
1 tbsp Honey, dark
1 medium garlic cloves , minced
0.5 tsp ground ginger
0.25 tsp ground cumin
1 lb Pork, tenderloin, lean, raw , trimmed and cut into 3/4 inch cubes
1 tbsp fresh cilantro
2 tsp dry roasted unsalted peanuts , chopped


Directions
1 Mix the soy sauce, lime juice, onion, peanut butter, honey, garlic, ginger, cumin, and 1 tablespoon of water in a blender and process until smooth.
2 Place marinade into a large plastic bag with a zip top and add the pork. Seal the bag, pushing out the air as you do, and turn to coat well.
3 Refrigerate for at least 1-2 hours.
4 Preheat broiler, placing the rack 4-6 inches from the heat source.
5 Thread the pork onto the skewers and broil, turning often, until lightly browned on the outside and barely pink on the inside, about 3 minutes. Serve topped with peanuts.
Additional Information
If you are using wooden skewer, don't forget to soak them in water for about 30 minutes so they don't burn on the grill.
