Directions
1 In a small bowl mix the cumin, chili powder, vinegar, and cinnamon, rub onto both sides of pork.
2 In a large nonstick pan, heat oil over medium high heat, add pork and cook until brown, about 3 minutes per side.
3 Add red peppers, green onions, jalapeno peppers, garlic, corn, oregano, and tomatoes, scrape bottom of pan to loosen brown bits.
4 Cover, reduce heat, and simmer until pork is tender, about 45 minutes.
Additional Information
Serving this over brown rice or couscous makes this meal complete.
