1 Coat a medium saucepan with cooking spray, add oil; place over medium-high heat until hot. 2 Add onion, cook 5 to 7 minutes or until onion is tender, stirring often. Add broth, water, and red pepper; bring to a boil. 3 Add cornmeal to broth mixture in a slow, steady stream, stirring constantly with a wire whisk. 4 Reduce heat to medium, and simmer 25 to 30 minutes or until mixture pulls away from sides of pan, stirring often. Stir in cheese. Serve immediately.
