Servings
Ingredients
1 fresh pineapple
2 tbsp cold water
3 tbsp brown sugar
3 tbsp orange extract (or orange liqueur)
0.5 tsp grated orange peel
0.25 cup Blueberries, fresh
0.25 cup Raspberries, fresh


Directions
1 Peel and core pineapple. Slice into 12 1/4 inch thick slices.
2 Mix water, extract, and sugar over low heat in a large nonstick skillet. Stir constantly until sugar dissolves.
3 Bring mixture up to a boil adding the orange rind and pineapple slices.
4 Reduce the heat, cover and let simmer for 10 minutes.
5 Serve with syrup drizzled over 3 slices of pineapple. Top with 1 tablespoon each of raspberries and blueberries.
