Ingredients
1 medium lemons
0.25 cup sugar
1 tbsp vanilla extract (or 1 vanilla bean, split)
1 large pears , pared, cored, and cut into wedges
1 Apples, fresh, extra small, 2 1/2", USDA Commodity Commodity , pared, cored, and cut into wedges (Granny Smith)
2 tbsp Cranberries, dried (or raisins)


Directions
1 Remove the zest from lemon with a vegetable peeler, forming long strips.
2 Place in a medium saucepan.
3 Mix 1 cup water, sugar, and vanilla bean into the zest.
4 Bring to a boil.
5 Reduce heat and let simmer for 5 minutes.
6 Add apple, cranberries, and pear to the lemon mixture.
7 Let simmer for 10 minutes.
8 Remove and discard vanilla bean.
9 Transfer fruit to a medium sized bowl.
10 Simmer liquid for another 5 minutes, stirring occasionally, before pouring over fruit mixture.
Additional Information
You might want to use a sugar substitute instead of the granulated sugar.
