Ingredients
0.33 cup cold water (plus 1 tablespoon)
1 cup reduced fat baking mix (Bisquick)
1 Pudding, pistachio, fat & sugar free, instant, serving , dry - do not make as directed on box (Jell-O brand) (1-1oz package)
5 tbsp sugar , divided
1 egg whites
0.5 tsp almond extract


Directions
1 Preheat oven to 350 degrees F.
2 Spray 2 cookie sheets with non-fat cooking spray and set aside.
3 In a medium-sized bowl, mix all ingredients (except 1 tablespoon sugar) with a spoon until well mixed.
4 Drop by rounded teaspoonfuls onto prepared cookie sheets.
5 Evenly sprinkle cookies with remaining 1 tablespoon sugar.
6 Bake for 8 minutes or until bottoms are lightly golden brown.
Additional Information
Great to serve for St. Patrick's Day or Easter.
