Ingredients
2 tbsp brown sugar
2 tbsp low sodium soy sauce
1 tsp grated orange peel
6 floz pineapple juice
0.5 tsp salt , divided
2 tsp canola oil
4 salmon fillet (6-ounce salmon fillets about 1 inch thick)
0.25 tsp black pepper , freshly ground
1 pinch grated orange peel (optional)


Directions
1 Whisk together brown sugar, soy sauce, orange zest, pineapple juice, and 1/4 teaspoon salt in a small pot.
2 Bring to a boil over high heat. Lower heat and simmer 15 minutes, liquid should be reduced to 1/4 cup. Remove from heat and set aside.
3 Preheat oven to 400 degrees F.
4 Pour oil in a large frying pan and heat over medium-high heat.
5 Season both sides of salmon with the rest of the salt and pepper. Place salmon in pan and cook 3 minutes.
6 Flip salmon over and move pan to oven and bake 3 minutes.
7 Remove pan from oven and baste with 1 tablespoon of sauce.
8 Place pan back into oven and cook 1 minute or until salmon is flaky.
9 When ready to serve, garnish with orange rind and remaining sauce.
Additional Information
This sweet sauce works great with shrimp kebabs or with chicken.
