Directions
1 Flatten chicken breasts to 1/4 inch thickness by placing between two sheets of heavy duty plastic wrap and hitting with a rolling pin or mallet.
2 Sprinkle the coriander and salt over the chicken and lightly spray with nonstick cooking spray.
3 Spray nonstick cooking spray in a large pan and heat over medium heat until hot, add chicken and cook until cooked thoroughly, about 6 minutes per side.
4 Add in 2 tablespoons of the pineapple preserves and cook to glaze chicken on both sides.
5 In a small bowl, mix the remaining 2 tablespoons of preserves with the pineapple, cilantro, vinegar, and jalapeno peppers, stir well and serve on top of the glazed chicken.
Additional Information
Use fresh pineapple when in season, just cut into small pieces.
