2 tbsp margarine
3 cup fresh diced pineapple , chopped
0.5 cup packed brown sugar
2 tbsp cornstarch
1.33 cup unsweetened pineapple juice
1 tbsp rum (optional)


Directions
1 In a large pan, melt margarine over medium high heat, add pineapple and sauté until soft, about 4-5 minutes.
2 In a small cup, mix the sugar and cornstarch then slowly add in the pineapple juice and mix.
3 Add the cornstarch mixture to the pot and heat until thick and bubbly, stirring constantly.
4 Stir in rum (optional).
Additional Information
Serve over angel food cake, sugar free ice cream or fat free pound cake. You can lower the carbs in this recipe by using a brown sugar substitute and a bit less pineapple and pineapple juice.
