Directions
1 Reserving the liquid, drain the pineapple and set it aside. Add water to the pineapple liquid to yield 1 cup.
2 In a small saucepan, combine the liquid mixture and gelatin, stirring well. Let stand for 1 minute and then cook over low heat for 1 minute, or until the gelatin dissolves.
3 Remove the pan from the heat and then stir in the crushed pineapple and vanilla. Cover and refrigerate the mixture until it reaches the consistency of an unbeaten egg white.
4 In a medium bowl, combine the dry milk powder and ice water. With an electric mixer, beat at medium speed until foamy. Add the lemon juice and then continue to beat for 3 to 4 minutes, or until soft peaks form, gradually adding the sugar substitute in the process.
5 Fold the gelatin mixture into the whipped milk mixture.
6 To serve, spoon into six 6 oz custard cups or dessert dishes.
Additional Information
This dessert may be served immediately or made a few hours prior and stored, covered, in the refrigerator.
