Servings
Ingredients
1 lb ground turkey , ground
1 medium onions , chopped
5 small carrots, fresh, 5 1/2" long , diced
2 medium zucchini (or other squash)
2 medium potatoes , diced
0.5 tsp salt
1 pinch black pepper
0.5 tsp ground cumin
10.5 oz Tomato Sauce, Spanish style, 303 can
1 tsp cornstarch


Directions
1 Brown ground turkey in a non-stick frying pan. Add onions, carrots, squash, potatoes, salt, pepper, and cumin.
2 Sauté for about 5 minutes.
3 Add tomato sauce and just enough water to cover.
4 Bring to a boil, then lower heat and simmer, uncovered, until vegetables are tender.
5 Dissolve cornstarch in about 1 Tablespoon of cold water, add to mixture.
6 Bring to a boil until gravy thickens. Serve.
