1 Press the peppercorns into the sides of the turkey. Pound the cutlets to press the peppercorns in completely.
2 Melt the butter in a non-stick skillet. Cook the turkey for 4 minutes then turn over and cook for another 4 minutes. Transfer onto a plate. Mix in the brandy and wine. 3 Bring to a boil. Cook until most of the liquid has evaporated and 1/4 cup is left. Drizzle the mixture over the turkey and garnish with the parsley, if desired.
