Ingredients

1 lb Beef, top sirloin steak, raw , trimmed and cut into thin strips
2 tbsp peanut oil
3 medium garlic cloves , chopped
1 yellow onion , chopped
5 scallions , chopped white and green
2 medium tomatoes , chunked
1 pinch black pepper
0.5 tsp hot red pepper flakes
1 large green bell peppers , cut into strips
1 medium red bell peppers , cut into strips
1 cup low sodium vegetable broth
1 tbsp light soy sauce (gluten free)
2 tbsp cornstarch
0.25 cup tap water


Directions

1 In wok, heat oil over medium high. Add garlic and beef. Cook 3-4 minutes, stirring frequently.
2 Add yellow onion and stir fry until meat is cooked thoroughly.
3 Add scallions, tomatoes, black pepper, pepper flakes, green pepper, red pepper, vegetable broth, and soy sauce.
4 Cook over medium until peppers are tender crisp, 5-6 minutes, stirring occassionally.
5 In small cup, dissolve cornstarch in water. Add to wok.
6 Cook 1-2 minutes, stirring frequently, until sauce has thickened.
Additional Information
Serve over cooked brown rice, if desired.
