1 lb Pork, tenderloin, lean, raw , all fat trimmed
1 tsp chili powder
0.5 tsp garlic powder
1 cooking spray
0.5 cup fresh chopped onion , finely chopped
1.5 tsp minced garlic
15 oz canned, crushed tomatoes , undrained
1 tbsp cider vinegar
1 tbsp prepared yellow mustard
1 tsp chili powder
0.25 tsp maple extract
0.25
2.5 tsp Equal packets
1 pinch salt and pepper
6 Buns, hamburger, mixed grain , toasted


Directions
1 Preheat oven to 425 degrees F.
2 Rub pork with 1 teaspoon chili powder and garlic powder; place in baking dish.
3 Bake until pork is well browned and juices run clear, 30 to 40 minutes.
4 Let stand 10 to 15 minutes. Cut into 2- to 3-inch slices. Shred slices into bite-size pieces with a fork.
5 To make sauce, spray a medium saucepan with cooking spray; heat over medium heat until hot.
6 Saute onion and garlic until tender (approximately 5 minutes). Add tomatoes, vinegar, mustard, chili powder, maple extract and liquid smoke to saucepan; heat to boiling.
7 Reduce heat and simmer, uncovered, until medium sauce consistency, 10 to15 minutes. Stir in Equal. Season with salt and pepper to taste.
8 Stir pork into sauce. Cook until hot 2 to 3 minutes. Spoon mixture into buns. Enjoy!
Additional Information
Serve with raw carrots and celery on the side.
