1 In a blender or food processor, mix together the bread crumbs, peanuts, parsley, salt, and pepper until chopped very fine. 2 Place mixture into a shallow dish. 3 In a separate shallow dish, mix the mayonnaise and lime juice. 4 Dip the fish 1 piece at a time, first into the mayonnaise mixture and then into the bread crumb mixture. Be sure to coat both sides. 5 Bake for 6 minutes, turn fish and bake until fish is opaque and flakes easily, about 4 minutes or more.
Additional Information
You can also use any other white fish of your choice. For obvious reasons, do not eat this if you have a nut allergy.
