1 Heat oil in a wok or large skillet, and add the chicken. 2 Brown over medium-high heat for about 7-10 minutes. 3 Add scallions, garlic, cornstarch, ginger, cayenne, chicken broth, honey, soy sauce, and mushrooms. 4 Cook, stirring constantly, until thickened. 5 Cover and cook over low heat, 15 to 20 minutes. 6 Sprinkle with peanuts and serve.
