1 Preheat oven 350°F. 2 Line baking sheet with parchment paper.
3 In mixing bowl, with stand or hand electric mixer, beat egg, sugar, baking soda, and vanilla. Beat in peanut butter. Stir in chocolate chips, if desired. 4 Drop batter by teaspoon onto prepared baking sheet. Press lightly with back of fork. 5 Bake 10 minutes. Transfer to cooling rack.
