1 Coat pork cubes with taco seasoning. 2 Heat oil in large nonstick skillet over medium-high heat. 3 Add pork and cook to brown, stirring occasionally. 4 Add salsa and preserves to pan, lower heat, cover and simmer for 15-20 minutes. 5 Serve over rice, if desired.
