Ingredients
0.25 tsp lime peel zest
2 tbsp fresh lime juice
1 tbsp olive oil
1 tbsp fresh peppermint , chopped
0.5 tsp dijon mustard
0.25 tsp salt
0.25 tsp black pepper , coarsely ground
2 cup fresh watercress, chopped , tough stems thrown out
2 lb medium peaches , peeled and cut into wedges
1 large jicama , peeled and cut into 1 1/2 x 1/4 inch sticks


Directions
1 In a large bowl, whisk together the lime peel, lime juice, honey, oil, mint, mustard, salt, and pepper.
2 Add the watercress, peaches, and jicama, stir well to coat and serve.
Additional Information
A nice side salad for lunch.
