Ingredients
1 cooking spray
1.75 cup white all purpose flour
2.5 tsp low sodium baking powder
0.75 tsp salt
0.5 tsp ground cardamom
0.33 cup margarine
0.67 cup sugar
2 eggs
0.33 cup fat free milk
1 cup peeled and sliced peaches , chopped
0.5 cup fresh blueberries (or frozen)


Directions
1 Preheat oven to 350 degrees F. Lightly spray a 9 x 5 inch loaf pan with nonstick cooking spray and set aside.
2 In a large bowl, mix together the flour, baking powder, salt, and cardamom.
3 In a separate bowl, mix the margarine, sugar, and eggs with an electric mixer until light and fluffy.
4 Gradually add dry ingredients to margarine mixture, stirring until just combined.
5 Gently fold in peaches and blueberries, then spoon into prepared loaf pan.
6 Bake until toothpick inserted in the center comes out clean, about 70-80 minutes.
7 Remove pan from oven and cool for 10 minutes, then remove bread from pan and cool completely.
Additional Information
For less of a spice flavoring, replace the cardamom with mace or nutmeg.
