Ingredients
1 cup Pasta, spaghetti, enriched, cooked , cut into 1/2 inch pieces (or linguini)
2 eggs
2 egg whites
0.5 cup bread crumbs
0.5 cup Sweet Potatoes, dark orange, fresh, cubes, USDA Commodity Commodity , shredded
0.5 cup chopped zucchini , shredded
0.5 cup chopped red bell peppers
0.25 cup fresh chopped onion
2 tbsp chopped parsley
0.5 tsp cilantro, leaves, dried (or dried tarragon)
1 whole jalapeno pepper , small, finely chopped
0.25 tsp salt
0.25 tsp white pepper
0.12 tsp ground cayenne (red pepper)
1 cooking spray


Directions
1 Combine linguine with eggs and egg white, breadcrumbs, sweet potato, zucchini, pepper, onion, parsley, tarragon, jalapeno, salt, and peppers in a bowl.
2 Coat a frying pan with cooking spray, and place over medium heat.
3 Pour half the mixture into the pan and spread evenly to form a cake.
4 Cook 3 to 4 minutes, flip and cook 3 to 4 minutes on other side.
5 Continue with other half of mixture. Slice pancakes in half and serve with pesto or pasta sauce.
Additional Information
Use any kind of leftover pasta for this delicious and different way to eat pasta.
