1 Combine linguine with eggs and egg white, breadcrumbs, sweet potato, zucchini, pepper, onion, parsley, tarragon, jalapeno, salt, and peppers in a bowl. 2 Coat a frying pan with cooking spray, and place over medium heat. 3 Pour half the mixture into the pan and spread evenly to form a cake. 4 Cook 3 to 4 minutes, flip and cook 3 to 4 minutes on other side. 5 Continue with other half of mixture. Slice pancakes in half and serve with pesto or pasta sauce.
