4 oz Pasta, macaroni, whole wheat, cooked , cooled
5 large hard-boiled eggs , coarsely chopped
0.5 cup Pea Pods, fresh, chopped , sliced
0.25 cup fresh chopped onion
0.25 cup chopped red bell peppers
1 pinch salt (optional)
1 pinch black pepper
1 cup romaine lettuce leaf , as garnish
1 fresh tomatoes , cut into wedges
0.5 cup mayonnaise
3 tbsp white wine vinegar
1 tbsp dijon mustard
0.25 cup chopped parsley
0.25 cup fresh chives
2 tbsp fresh chopped celery


Directions
1 In large bowl, gently toss pasta, eggs, snow peas, onion, and bell peppers.
2 In small bowl, whisk salt, pepper, mayonnaise, vinegar, mustard, parsley, chives and celery. Drizzle dressing over pasta mixture and toss until well combined
3 Chill until ready to serve. Serve on a bed of romaine lettuce leaves with fresh tomato wedges as garnish.
