1 Place 4 egg whites and 2 whole eggs in a microwave-safe bowl. 2 Add turkey, Parmesan cheese, and salt and pepper to taste. Whisk with a fork. 3 Microwave on high for 1 minute. Stir. 4 Microwave for an additional 30 seconds and stir again. 5 Arrange lettuce leaves on 2 plates and place tomato slices on top. Spoon eggs onto plate.
