Servings
Ingredients
1 cooking spray
16 oz fresh cod fillets
0.25 cup light mayonnaise
0.25 cup Cheese, parmesan, fresh, grated
2 scallions , trimmed and finely sliced
2 tbsp chopped red bell peppers , finely diced
0.33 cup Bread Crumbs, Italian style
0.5 tsp dried basil
1 pinch salt and pepper , to taste


Directions
1 Preheat the oven to 400 degrees F.
2 Place the fillets in a baking dish coated with cooking spray.
3 In a small bowl, stir together the mayonnaise, cheese, scallions, and red pepper, and spread evenly over the fillets.
4 In another small bowl, stir together the breadcrumbs, basil, salt, and pepper and sprinkle evenly over the coated fish.
5 Bake about 12 minutes until the fillets are cooked through and the crumbs are lightly browned. Serve immediately.
Additional Information
Serve a little cocktail sauce on the side to spice it up, if you like.
