Ingredients
1 cooking spray
0.75 cup bread crumbs
0.25 cup grated Parmesan cheese
0.25 cup canola oil , or butter, melted
2 tbsp Mustard, dijon
6 boneless skinless chicken breasts (about 1 3/4 pounds)


Directions
1 Heat oven to 375 degrees F. Coat bottom and sides of 13 x 9 x 2 baking dish with cooking spray.
2 In a large resealable plastic food-storage bag, mix bread crumbs and cheese.
3 Mix oil and mustard in shallow dish.
4 Dip chicken into oil mixture, then shake in bag to coat with crumb mixture.
5 Place in pan.
6 Bake uncovered 20 to 25 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.
