1 Add the broth and sweet potatoes to a large deep dish frying pan and bring to a simmer over medium heat. Cover and cook 8 minutes. 2 Add in the mushrooms, shallots, garlic, mustard, thyme, and 1/4 teaspoon of pepper. 3 Cook, uncovered, until vegetables are tender and sauce is reduced slightly, about 5 minutes. 4 Remove from heat and keep warm. 5 Place a large nonstick pan over medium high heat until hot and add in the steak. 6 Season with salt and remaining pepper; cook until browned, about 4 minutes per side, turning only once. Check in the center for desired doneness. 7 Place on a cutting board and slice steak across the grain into thin slices. 8 Serve with sweet potatoes.
