Ingredients
0.75 cup fat free unsalted beef broth
2 sweet potatoes , cut into 1/2 inch cubes (about 1 lb.)
0.5 lb fresh mushroom slices
0.25 cup shallots, chopped , chopped fine
2 medium garlic cloves , minced
1.5 tbsp dijon mustard
1.5 tbsp fresh thyme
0.5 tsp black pepper
1 lb Beef, top sirloin steak, lean, raw , 1 inch thick, trimmed of visible fat
0.25 tsp salt


Directions
1 Add the broth and sweet potatoes to a large deep dish frying pan and bring to a simmer over medium heat. Cover and cook 8 minutes.
2 Add in the mushrooms, shallots, garlic, mustard, thyme, and 1/4 teaspoon of pepper.
3 Cook, uncovered, until vegetables are tender and sauce is reduced slightly, about 5 minutes.
4 Remove from heat and keep warm.
5 Place a large nonstick pan over medium high heat until hot and add in the steak.
6 Season with salt and remaining pepper; cook until browned, about 4 minutes per side, turning only once. Check in the center for desired doneness.
7 Place on a cutting board and slice steak across the grain into thin slices.
8 Serve with sweet potatoes.
Additional Information
Add fresh steamed asparagus to make this meal complete.
