1 In small microwave-safe bowl, heat preserves in microwave, on low power in 15 second intervals, until hot. 2 Remove bowl from microwave, stir in horseradish, set aside. 3 Rub jerk seasoning into salmon to coat all sides. 4 Heat large nonstick skillet over medium-high until hot enough to sizzle a drop of water. 5 With oven mitt, briefly remove pan from heat and lightly coat with olive oil spray. 6 Place salmon in pan, smooth side down. 7 Return to heat and cook 2 minutes per side. 8 Reduce heat to medium, cook 2 - 3 additional minutes per side, or until salmon is opaque. 9 Transfer to serving plate, top with sauce and serve immediately.
