1 Heat oil in a large nonstick pan over medium high heat. Cook 1/2 of the chicken until no longer pink throughout, about 4 minutes; turn once. Remove from pan and place on a plate. Repeat with other half of chicken.
2 Place all of the chicken into the pan and lower heat to medium. Top with marinara sauce and mozzarella.
3 Cover and cook until mozzarella is melted and sauce is heated, about 2 minutes. Stir in tomatoes, Parmesan, and basil; serve immediately.
Additional Information
Serve this over whole wheat pasta or on its own.
