Ingredients
4 fresh endive, heads , washed and trimmed
0.5 cup chicken broth, low sodium , or 1 tablespoon chicken soup powder mixed with 1/2 cup boiling water
1 tbsp fresh lemon juice
2 tsp chopped parsley , finely chopped
1 pinch salt and pepper
1 Cooking Spray, canola, non-aerosol, butter flavor, 1/3 sec spr


Directions
1 Preheat oven to 350 degrees F.
2 Arrange endives in glass baking dish and pour broth and lemon juice on top.
3 Spray with non-stick cooking spray.
4 Cover and bake for about 30 minutes, until fork-tender.
5 Remove from oven and cool.
6 Cut endives into quarters and rearrange in the same dish.
7 Sprinkle with the rest of the ingredients.
8 Broil for a few minutes, until they start to brown.
Additional Information
Can be eaten warm or at room temperature.
