Ingredients
1 cooking spray
1 lb Tomatoes, green, fresh, whole, medium (about 3 medium)
0.25 cup liquid egg substitute , or 1 egg
2 tbsp fat free milk
0.5 cup cornmeal
0.25 cup white all purpose flour
1 tsp poppy seeds
0.25 tsp salt
0.12 tsp black pepper


Directions
1 Preheat the oven to 450 degrees F, and lightly spray a baking sheet with vegetable oil spray.
2 Cut the tomatoes into 1/4-inch-thick slices.
3 Stir together the egg substitute and milk in a small bowl.
4 Combine the cornmeal, poppy seeds, flour, salt, and pepper in a pie pan or shallow baking pan.
5 Place the tomato slices, egg mixture, cornmeal mixture, and baking sheet in order in a line.
6 Dip the tomato slices in the egg mixture using tongs, letting any excess drip off.
7 Lightly coat both sides of the tomatoes with the cornmeal mixture, and place the tomatoes in a single layer on the baking sheet.
8 Bake for 10 minutes, flip them over, then bake for 5 minutes, or until golden-brown.

Tastes like traditional fried green tomatoes but without all the fat!
