Ingredients
6 cup low sodium vegetable broth
1 tbsp fresh ginger root , 3 slices, 1/4' thick
2 Greens, watercress, fresh, sprig , 2 cups
1 pinch salt
1 pinch black pepper
2 fresh green onions , sliced
2 tbsp shredded carrots


Directions
1 In large pot, combine broth and ginger root and bring to boil over medium-high.
2 Lower heat, cover, and let simmer 5 minutes.
3 Using slotted spoon, remove ginger root and discard.
4 Trim stems from watercress.
5 Mix into soup and let simmer 10 to 15 minutes.
6 Sprinkle with salt and pepper.
7 Garnish soup with green onions and carrots.
Additional Information
Spinach can be substituted for watercress.
