Ingredients
0.25 cup plain nonfat yogurt
1 tbsp frozen orange juice concentrate , thawed
1 tsp fresh lemon juice
1 tbsp fresh chives , minced
1 tbsp chopped parsley , minced
1.5 tsp grated orange peel
1 medium garlic cloves , minced
1 lb salmon fillet , skinned and cut crosswise into 4 equal pieces (4-ounce salmon fillets or 1 [1-pound] fillet, skinned and cut crosswise into 4 equal pieces)


Directions
1 Preheat oven to 425 degrees F.
2 Mix together yogurt, orange juice concentrate, and lemon juice in a bowl, set aside.
3 Mix chives, parsley, orange rind, and garlic in another bowl and set aside.
4 Slice 4 (13 x 13-inch) pieces of parchment paper or aluminum foil.
5 Cut each into a heart shape.
6 Lay 1 fillet on one side of each piece of parchment.
7 Spoon 1 tablespoon of yogurt mixture over fish and top with chive mixture.
8 Fold over other half of each parchment heart.
9 Starting with the rounded edge, pleat and crimp edges together to make a seal.
10 Twist ends tightly to seal.
11 Arrange on a large baking sheet.
12 Bake 15 minutes or until parchment is golden and beginning to puff up.
Additional Information
This same technique and sauce can be used to duck or chicken, it creates a moist meat.
