Ingredients
0.12 tsp ground nutmeg
24 oz orange roughy fillet , skinned (4 fillets)
0.25 tsp salt
0.25 tsp black pepper
1 cooking spray
0.12 tsp paprika
0.25 cup white all purpose flour
2 cup lowfat milk
0.75 cup shredded gruyere cheese
0.33 cup Cheese, parmesan, fresh, grated


Directions
1 Preheat broiler.
2 Blend together flour and milk with a whisk in a medium sized saucepan.
3 Set over medium heat and cook about 8 minutes,stir continuously, mixture will become thick. .
4 Take off of heat and mix in cheese, continue to stir until fully melted.
5 Stir together cheese sauce and nutmeg.
6 Season fish with salt and pepper on both sides.
7 Position fillets on a cooking spray coated baking sheet and place under broiler.
8 Cook for 6 minutes.
9 Take fillets out of oven and flip over.
10 Spoon 3 tablespoons of cheese sauce on each fillet and season with paprika.
11 Place back under broiler and cook for 2 minutes, fillets should be slightly browned.
Additional Information
Any firm white fish can be used with this recipe. Try using chicken too. Use a variety of cheeses or mix a few different ones together. Fontina cheese works very well. Make sure to keep an eye on the fish in the final broiling step as it will brown very quickly.
