0.5 cup orange juice
2 tbsp fresh chopped green onion
1 tbsp fresh ginger root , peeled, minced
1 tbsp fresh cilantro , minced
2 tbsp rice vinegar
2 tbsp low sodium soy sauce
1 tbsp vegetable oil
2 tbsp grated orange peel
2 oz red hot chile peppers , minced (optional)
1 lb large raw shrimp , peeled, deveined
1 cooking spray
2 large oranges , quartered


Directions
1 In small bowl, whisk orange juice, green onion, ginger, cilantro, vinegar, soy sauce, oil, orange peel, and chile pepper .
2 Add shrimp and coat well.
3 Cover and refrigerate for 15 minutes.
4 Remove shrimp from marinade, reserve liquid.
5 In large saucepan, bring marinade to boil. Boil for 2 minutes, remove from heat and set aside.
6 Thread shrimp and orange quarters onto 8 skewers.
7 Lightly coat large grill pan or grill with cooking spray .
8 Grill shrimp 4 minutes per side, coating occasionally with reserved marinade.
Additional Information
If using wooden skewers, soak in water for 20 minutes before using.
