Ingredients
0.25 cup sugar
3.75 cup fat free milk
0.25 cup frozen orange juice concentrate
0.33 cup sugar
3 eggs
0.75 cup liquid egg substitute , or 6 egg whites
0.12 tsp orange extract


Directions
1 Heat 1/4 cup sugar in a frying pan over medium high heat until it melts, stirring continually. Quickly pour syrup into the bottom of a 2 quart casserole and spread evenly to coat. Reserve.
2 Combine milk, orange juice concentrate, and 1/3 cup sugar in a sauce pot and heat until it is just bubbly. Whisk eggs and egg substitute and pour in hot milk and orange extract. Strain mixture over a fine chinois over the casserole dish.
3 Put casserole in a roasting pan on the middle oven rack. Place lid on dish. Pour 2 inches of hot water into roasting pan. Bake at 350 degrees F for 1 hour or until a knife comes out clean. Take casserole out of pan and let cool to room temperature. Chill 8 hours.
4 When ready to serve, invert casserole over a serving dish.
