Ingredients
2 cup romaine lettuce
2 medium kiwi, peeled , sliced into 1/4-inch rounds
1 Oranges, medium, fresh , peeled and sliced into 1/2-inch rounds
1.5 tbsp olive oil
3 tbsp apple cider , or champagne vinegar
1 tsp fresh lemon juice
1 tbsp cold water
1 tsp sweetener (sugar substitute) (equal to 1 tsp sugar)
1 pinch salt and pepper


Directions
1 Wash lettuce and tear into bite-sized pieces. Spin or pat dry.
2 Put on a serving platter and top with kiwis and oranges arranged in a circular pattern.
3 Combine the oil, vinegar, lemon juice, water, sugar substitute, salt and pepper in a small bowl.
4 Whisk until blended. Drizzle the dressing over the salad.
5 Garnish with red onion rings and almonds.
6 Garnish: 1 medium red onion, peeled and sliced into rings. 2 tablespoons slivered or sliced roasted almonds.
Additional Information
Spray almonds with non-stick cooking spray before roasting.
