Directions
1 Soak twenty 6 to 8-inch bamboo skewers in cold water for at least 10 minutes.
2 Preheat the broiler, and lightly spray the broiler pan and rack with vegetable oil spray.
3 Cut the chicken into 40 thin strips, and then thread 2 strips onto each skewer in an "s" shape.
4 In a small bowl, whisk together the remaining ingredients until smooth.
5 Pour a quarter of the sauce into a separate bowl to for dipping, and baste the chicken with about 1/4 cup sauce.
6 Broil the skewers for 2 minutes, then turn and baste with about 1/4 cup sauce.
7 Broil for 2 minutes, or until the chicken is no longer pink in the center, and baste with the remaining sauce.
8 Place the skewers on a platter, and serve with the extra sauce for dipping on the side.
Additional Information
If spread is lumpy after whisked, microwave on high for 15 seconds, stir, and microwave for another 15 seconds, or until smooth.
