Ingredients
1 Turkey, average, skin, raw , thawed (12 lbs)
1 tsp olive oil
2 tbsp oregano leaves
2 tbsp ground coriander
1 tbsp grated lemon rind
1 tsp salt
0.5 tsp black pepper
3 medium garlic cloves , crushed
2 fresh lemons , halved
1 cooking spray


Directions
1 Preheat oven to 350 degrees F.
2 Spray baking sheet with cooking spray.
3 Take out and throw away giblets and neck from turkey. Wash turkey with cold water, and pat dry. Trim excess fat.
4 Coat turkey with oil.
5 In a bowl, mix oregano, coriander, lemon rind, salt, and pepper.
6 Massage spices overtop of whole turkey.
7 Arrange garlic and lemon in cavity then secure ends of legs together with cord.
8 Lift wing tips up and over back and tuck under turkey.
9 Lay turkey, breast side up on baking sheet. Bake for 1 hour.
10 Cover breast with aluminum foil and bake another 2 hours or until a meat thermometer reads at least 180 degrees F.
11 Let cool 10 minutes before slicing.
