12 oz skinless cooked turkey breast , diced
1 medium celery stalk , finely chopped
2 oz scallions , thinly sliced
0.33 cup chopped walnuts (optional)
4 piece sliced whole wheat bread
2 tbsp mayonnaise
4 Boston lettuce leaves

Dressing Ingredients
6 tbsp mayonnaise
0.25 cup sour cream
0.5 tsp fines herbes


Directions
1 NOTE: Turkey salad must marinate for 2 hours before making sandwiches.
2 In mixing bowl, toss turkey, celery, scallions, and walnuts (if desired).
3 In separate bowl, combine dressing ingredients.
4 Add dressing to turkey mixture, tossing to mix well. Cover and refrigerate at least 2 hours.
5 On serving plate, place bread, lettuce leaf and 1/4 turkey salad. Repeat for remaining sandwiches, serve immediately.
Additional Information
Fines herbs can be made by mixing 1 tbsp. chopped tarragon, 1 tbsp. chopped chervil, 1 tbsp. chopped chives, and 1 tbsp. chopped parsley. Store remaining herb mixture in airtight container for later use.
