Directions
1 Preheat the broiler.
2 Mix the spinach, cottage cheese, egg substitute, oregano, salt, and cayenne in a bowl. Add in the artichokes.
3 Heat a nonstick skillet over medium heat.
4 Spray with cooking spray and cook the onions for 6 minutes, stirring often.
5 Add in the artichoke mixture and decrease the heat to low.
6 Cover and cook for about 15 minutes.
7 Evenly spread the cheese on top and broil 1 to 2 minutes.
8 Remove from the broiler and let sit for 5 minutes before serving.
Additional Information
If possible, use small curd cottage cheese.
