3 tbsp chopped parsley
4 pitted calamata olives , minced
1 medium garlic cloves , minced
4 tbsp fresh lemon juice , to taste
0.5 , seeded and chopped
0.5 medium red bell peppers , chopped (or orange bell pepper)
1 medium tomatoes , seeded and chopped
0.33 cup fresh chopped red onion
1 oz reduced fat feta crumbles (heaping 1/4 cup)
4 oz Chicken, breast, grilled


Directions
1 In a serving bowl, combine the parsley, olives, and garlic.
2 Whisk in 4 tablespoons lemon juice.
3 Throw in the cucumber, bell pepper, tomato, onion and 3 tablespoons of the cheese.
4 Toss to coat the ingredients in the lemon dressing.
5 Taste and add up to 1 tablespoon more lemon juice, if desired.
6 Toss to coat the ingredients in the lemon dressing.
7 Scatter the chicken over the salad.
Additional Information
Very light and lemony! This recipe makes a great side salad or, with the chicken, a meal on its own!
