Directions
1 Preheat oven to 325 degrees.
2 Coat a large nonstick skillet with cooking spray, and add oil. Place over medium-high heat until hot.
3 Add mushrooms, celery, onion, and garlic and cook 5 to 10 minutes or until vegetables are tender, stirring often. (Add 1 to 2 tablespoons of water during cooking, if necessary). Set mushroom mixture aside.
4 In a large bowl combine ground round, turkey, ½ cup tomato sauce, egg substitute, breadcrumbs, parsley, basil, pepper, and salt.
5 Add mushroom mixture, stirring well.
6 Press mixture into a 9- x 5- x 3-inch loafpan coated with cooking spray.
7 Top evenly with remaining ½ cup tomato sauce.
8 Bake at 325 degrees for 1 hour. Let stand in pan for10 to 15 minutes before slicing.
