Ingredients
2 tsp olive oil
0.33 cup shallots, chopped
1.5 tsp curry powder
1 cup clam juice
0.5 cup white wine , dry
0.5 cup lite coconut milk
2 tbsp fresh lemongrass , finley chopped, peeled
0.25 tsp hot red pepper flakes
3 lb mussels , scrubbed and debearded
2 tbsp fresh cilantro , chopped


Directions
1 Pour oil in a large Dutch oven or pot and heat over medium heat. Cook shallots in oil for 1 minute. Mix in curry powder and cook 30 seconds.
2 Mix in clam juice, wine, milk, lemon grass, and pepper and let simmer. Stir in mussels and let boil.
3 Place lid on pot, lower heat, and simmer 5 minutes or until shells open up. Season with cilantro. Throw away any unopened shells.
Additional Information
Serve with crusty bread to soak up the delicious broth.
