Ingredients
1 butter flavored cooking spray
12 oz fresh shiitake mushrooms (or cremini mushrooms)
0.25 cup fresh chopped onion , finely chopped
1 tsp minced garlic
0.25 cup white wine , dry (or reduced sodium vegetable broth)
0.25 tsp ground thyme
0.5 cup fat free sour cream
1 pinch salt
1 pinch ground cayenne (red pepper)


Directions
1 Heat a cooking spray coated frying pan over medium heat. Chop mushrooms, cutting off rough stems. Sauté mushrooms, onion, and garlic 3 to 4 minutes.
2 Mix wine and thyme into to pan and bring to a boil. Lower heat, place lid on pan, and simmer 8 to 10 minutes. Continue cooking over low heat 20 to 25 minutes until mushrooms are dry and golden. Mix in sour cream, salt, and pepper.
Additional Information
This is great served with pierogi, ravioli, or grilled eggplant slices.
