Ingredients
3 medium garlic cloves , finely chopped
2 cilantro sprigs , finely chopped
3 cup fresh mushrooms , quartered
1 tsp red curry paste
1 eggs , lightly beaten
1 tbsp light soy sauce
0.5 tsp sugar
3 kaffir lime leaves , finely chopped
4 medium yellow bell peppers , halved lengthways and seeded


Directions
1 Begin by blending the garlic with the cilantro roots in a mortar or spice grinder and then scrape into a bowl.
2 Next, put the mushrooms in a food processor and pulse briefly until they are finely chopped. Add the garlic mixture, and then stir in the curry paste, egg, sauces, sugar, and lime leaves.
3 Now, after placing the pepper halves in a steamer basket, spoon the mixture loosely into the peppers. Bring the water in the steamer to a boil, then lower the heat to simmer, and steam the peppers for 15 minutes, or until the flesh is tender.
Additional Information
If you prefer, use any combination of red, green, yellow, or orange bell peppers in this recipe.
