0.25 cup fresh lemon juice
1 tbsp fresh cilantro , minced
1 tsp ground cumin
0.25 tsp ground red pepper (cayenne)
3 medium garlic cloves , crushed
24 oz sea bass fillet , about 1 inch thick (4 6-ounce fillets)
2 tbsp ground coriander
2 tsp black pepper
1 tsp caraway seeds
1 tsp ground cumin
1 tsp paprika
0.25 tsp salt
1 tbsp olive oil
1 medium lemons , optional (cut into 4 wedges)
4 cilantro sprigs (optional)


Directions
1 Whisk together lemon juice, cilantro, cumin, red pepper, and garlic. Pour into a resealable plastic bag and add in fish. Chill 45 minutes. Take fish out of bag and dispose of liquid.
2 Mix coriander, pepper, caraway seeds, cumin, paprika, and salt. Massage mixture onto surface of fish.
3 Pour oil in a frying pan and heat over medium heat. Lay fish in oil and cook 6 minutes per side or until fish flakes. Top with lemon wedges and cilantro when serving.
Additional Information
Halibut, tilapia, or any firm white fish will work great with this rub and marinade.
